The 2023 Gautheron Chablis Vieilles Vignes comes from the oldest parcels of Domaine Gautheron, located in Fleys, in the heart of the Chablis appellation. Made from 100% Chardonnay, grown on Kimméridgian soils rich in marine fossils, it is a wine that combines freshness and elegance with the depth afforded by the old vines.

It displays a bright straw yellow color with golden highlights. On the nose, it releases an intense and complex bouquet, with notes of ripe citrus, peach, white flowers, aromatic herbs, and a pronounced minerality. On the palate, it is structured and balanced, with a nice acidic tension and a long, persistent finish, enriched by savory nuances typical of the Chablis terroir.

A white wine with character, capable of evolving over the years, ideal with raw fish, shellfish, molluscs, sushi, delicate white meats, and soft cheeses. Served at 10–12°C in large Chardonnay glasses, it best expresses the complexity of its origins.
